Rechead Prawns

Ingredients:

12  Large Prawns washed

Prawns cleaned

1 Tsp Tumeric pwd

1 Tsp Chilli pwd

Oil for frying

Salt to taste

Rechead Masala.

Rechead Masala recipe:

50 Gms Kashmiri chilly pwd

3 Cloves

1/2 Tsp Tumeric pwd

1/2″ Ginger pc

4 Garlic cloves

1/2 Onion

1/4 Tbsp Cummin seeds

Tamarind  – 1 sml size of lime

1/2 Tbsn Sugar

Salt as per taste

Grind all the above with Coconut vinegar to a fine paste, bottle it and refrigerate.

Method:

Remove the shell of the Prawns keeping the heads on.

Slit the prawns lenghtwise half way with a knife.

Devein and marinate the Prawns with Tumeric, Chilli pwd and Salt and apply the Rechead masala to the Prawns filling in the slits.

In a frying pan heat Oil and fry the Prawns on both sides.

PN: Do not over fry the Prawns as they will go chewy. We want them soft and juicy.
