Pork Curry


1 Kg Diced Pork

1 Onion chopped

1 Tomato chopped

Salt as per taste

Pinch of Sugar

2 Tbsp Oil

Red Masala:

20 Dried  Red Kashmiri chillies ( Quality of the chillies makes a big diff in the colour)

1 Tbsp Cumin seeds

1 Inch Cinnamon stick

10 Fresh Garlic cloves

1 1/2 Inch  Fresh Ginger

10 Black Pepper corns

1 Tsp Tumeric pwd

10 Cloves

2 Tbsp Goan vinegar

Grind the above ingredients to a fine paste.

Red masala


Marinate the Pork with the Red Masala and Salt for overnight.

In a cooker heat Oil and saute the Onion and Tomato till they turn soft.

Add the marinated Pork, mix well and fry for 5 mins

Add just enough water to form the gravy and pinch of Sugar

Close the lid of the cooker and cook on medium flame for 3 whistles or till the Pork is cooked. Check for Salt and Vinegar and is ready to serve.
