Karelas (Bitter Gourd)

Ingredients:

2 Karelas halved and deseeded

Karelas cut into half and deseeded

2 Mediun Onions finely chopped

2 Tomatoes finely chopped

3 Green Chillies chopped

3 Cloves of Garlic finely chopped

1Tsp Turmeric powder

1Tsp Red Chilly powder

1/2 Tsp Sugar or a piece of Jaggery

1 Sprig Curry leaves

1 Tbsp small dried Shrimps (Optional)

Ingredients

Salt to taste

2 Tbsp Oil

Method:

Slice the Karelas into fine semi circles.

Karelas cut into semi circles

In a cooking utensil, heat Oil and fry the Karelas till brown and crispy. Transfer to a Paper towel to drain excess Oil. In the same cooking utensil add all the above ingredients except sugar and fry for 5 mins on medium flame. Now add the fried Karelas and sugar and fry for another 5 mins and is ready to serve.

Serve with Rice or Roti
