Egg Drop Curry

Ingredients:

6 Eggs

1 Onion chopped fine

1Tsp Mustard seeds

1 Sprig of Curry leaves

2 Tsp Garam masala pwd

2 Tsp Curry pwd ( I used pkt from the shop or you can make your own curry pwd for which I have given the recipe below)

1 Tsp Coriander pwd

3 Tbs Tomato paste

2 Tbs Oil

Salt as per taste

Water as per your consistency

Coriander leaves to garnish.

Curry powder recipe:

Grind to a fine powder the below ingredients.

3Tbsp Coriander seeds,1 Tsp Mustard seeds,1 Tbsp Cumin seeds,1 Tsp Tumeric pwd,1 Tsp Ginger pwd,1 Tsp Fenugreek seeds,1 Tsp Black pepper corns,1/2 Tsp Cinnamon pwd,1/4 Tsp Cloves pwd,1/4 Tsp Cardamon pwd and 1/4 Tsp Chilli pwd.

Method:

Heat Oil in a cooking utensil and fry the Mustard seeds till they start to pop. Now add the Curry leaves, Onions, Garam masala pwd, Curry pwd, Coriander pwd, Tomato paste and fry on low flame till the Onions turn soft and the Oil starts to separate. Add the Water and Salt and bring the Curry to a boil. Now break the Eggs and drop them into the curry very gently and cook for a minute and turn of the flame. Garnish with Coriander leaves.
