Potato Bhaji

Recipe:

Ingredients:

2 Medium Potatoes cut into cubes

1 Sml Potato boiled and mashed

1 Lrg Onion chopped

1/2 Inch fresh Ginger peeled and grated

3 Green Chillies slit

1Tsp Mustard seeds

1Tsp Cumin seeds

1/2 Tsp Tumeric pwd

1 Sprig of Curry leaves

1 Tbs of fine chopped Coriander stems

2 Tbsp Ghee

Salt as per taste

Fresh Coriander leaves to garnish

Method:

Boil the Potatoes in a Pressure Cooker for 2 whistles and keep aside

Heat the Ghee in a Utensil on Medium flame and add the Mustard seeds till they splatter. Now add the Cumin seeds, Grated Ginger and Curry leaves and fry a minute. Now goes in the Onions Coriander stems and Chilies and fry till the Onions are translucent.

Add the Potatoes with little of the Stock,   Tumeric pwd and Salt  (I like my Bhaji to have a little gravy )

Add the Mashed Potato and give it a good stir and cook for a minute

Garnish with Coriander leaves and serve with Pooris
